Chocolate Cinnamon Marble Loaf

I’ve only used one banana in this loaf (you could omit completely if you don’t like bananas) and the swirl of chocolate sauce is DIVINE. Here’s how to make it…

INGREDIENTS:
• 1 ripe banana, mashed
• 1 egg
• 100g of yogurt
• 80ml of milk
• 250g of self raising flour
• 100g of dried mixed fruit
• 100g of light brown sugar
• 1 tsp of baking powder
• 2 tsp of cinnamon
• 30g of coconut oil
• 3 tbsp of cocoa powder
• pinch of sea salt

Preheat the oven to 180°c. Mash the banana with the back of a fork until puréed. Melt the coconut oil in a bowl and stir in 1 tsp of cinnamon, pinch of salt and all of the cocoa. Add the rest of the ingredients to a large bowl (weighing as you go along) and gently fold together until mixed thoroughly. Spoon half of the batter into a lined or greased loaf tin, drizzle over half of the chocolate sauce and swirl with a fork, pour over the remaining batter, swirl over the rest of the sauce and bake for 50 minutes. Job done!
